Happy Weekend!

Friday is finally here!  I hope you have some fun plans for the weekend.  As for me, we will be making these yummy pumpkin treats.  Andrew came home last week telling me he has several colleagues at the office who have never tasted pumpkin pie. What?!  That is crazy talk.  Pumpkin pie is the epitome of Thanksgiving and I can't imagine not having it.  These little cuties are just the right size for a taste. You're welcome in advance, fellas.




Pumpkin Pie Bites
2 ready to roll pie crusts
8 oz. cream cheese, room temperature
1/2 c. sugar
1 c. canned pumpkin
3 eggs
1 t. vanilla
1 t. pumpkin pie spice
pumpkin shaped cookie cutter

Preheat oven 350°.  Cut twelve pumpkin shapes per pie crust.  Press into mini muffin tray.  Mix cream cheese, pumpkin, sugar, 2 eggs, vanilla and spice until combined.  Apply egg white to top of pie crusts.  Spoon mixture into each pie shell.  Bake for 12 to 15 minutes.

I was lucky enough to score two beautiful gold framed sea fans this summer. They are painted white and mounted on cream linen.  They are completely lost when hung on the white wall.  I have decided to replace the fabric with black linen which will [hopefully] give them more prominence in the room.  Fingers crossed the DIY fairies will be with me and I won't tear these things to pieces. 



Pizza and wine sounds good.  We have a new-ish pizza joint that opened down the street from our home.  The weather here has been fantastic so we will be taking the girls and friends out for a pizza dinner under the stars.


I came across this quote on Pinterest and it really stayed with me.  I believe I have been working toward living my dream this year.  However, what are my wildest dreams?  I will make time in between child care and trips to the grocery to ponder.  What are your wildest dreams and are you prepared to throw caution to the wind and go after them?
